Easiest Fish Tacos

Easiest Fish Tacos



Description:

These fish tacos are fast and delicious!  They are just like the ones we had on the Mexican Riviera.


Ingredients:

frozen breaded fish fillets

corn tortillas

coleslaw (bagged from the store)


For the sauce:

mayonnaise

milk

black pepper


Instructions:

Bake frozen fish fillets according to package instructions.  Warm corn tortillas in microwave and mix sauce while fish is cooking. Thin mayonnaise with milk and add black pepper to taste.  When fish is done, place one fillet on two warmed tortillas.  Top with coleslaw and sauce and serve.

Clam Chowder


Serves 6-8

Ingredients

3 (6.5 ounce) cans minced or diced clams
1 cup minced onion
1 cup diced celery
2 cups cubed potatoes
1 cup diced carrots
6 strips bacon
3/4 cup butter
3/4 cup all-purpose flour
1 quart half-and-half cream
2 tablespoons red wine vinegar
2 tablespoons liquid smoke
1 1/2 teaspoons garlic salt (or powder if omitting the salt)
1 teaspoon bay leaves
Ground black pepper to taste

Directions

  1. Brown bacon in a large skillet, then set bacon aside to drain. Cook the vegetables in the bacon grease for a few minutes, then drain juice from the clams into the skillet. Add water to cover, and cook over medium heat until tender.
  2. Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Once melted, whisk in flour until smooth. Let the roux cook down. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
  3. Stir in vinegar and liquid smoke, and season with garlic salt, pepper, and bay leaves. Crumble up bacon and add to the pot. Stir in clams just before serving. If they cook too much they get tough. Serve when the clams are heated through!

Salmon Tacos with Mango Salsa


This is one of my favorite salmon recipes because I think it tones down the fishy salmon taste a LOT. And it's much simpler than most of the recipes I found!

Serves 2

Ingredients:
12 oz salmon
A container of mango salsa
Chili Powder
Paprika
Lemon Juice

Brush the salmon with some lemon juice, then sprinkle with chili powder and paprika. Either grill or fry the salmon until it is tender and falls apart in the pan. We've used both. I think grilling it tastes slightly better, but it's so much easier to clean a pan! Whichever you choose, shred the salmon, and divide it between the two tortillas. Dress with mango salsa and it's ready to eat!

Shrimp Nacho Salad

Shrimp
Taco Seasoning
1 Avocado
Fresh or favorite salsa
Chips
Cheese
Lettuce
Other Salad topping
Ranch dressing

Thaw, Shell and Devein +/- 1 lb Shrimp
Put Shrimp in frying pan sprayed with pam, sprinkle with Taco seasoning.
Sautee until shrimp turn pink - don't over cook.
Dice one avocado.
Stir shrimp and avocado into fresh Salsa.

Spread chips on cookie sheet, sprinkle generously with cheese.
Bake in oven until cheese is melted.

Assembly:

Layer Cheesy Chips, Lettuce, salad toppings, Shrimp/avocado Salsa, and dressing. Enjoy!

We loved this and our boys loved this - you know its a winner when its really easy and your boys will eat salad.
