Chicken Salad


 4 c. cut up chicken

1/2 c. onion, chopped

1/2 c. celery, chopped

1 c. mayonnaise

1 c. whipping cream, whipped

1 tsp. chicken bouillon granules or 1 cube

salt and pepper


Mix all ingredients together and spoon onto rolls or small cream puffs. Serves 12.

Oriental Chicken Salad

Ingredients


Salad:

 3 c. romaine lettuce - chopped

1 c. red cabbage - sliced thinly

1 c. napa cabbage - chopped

1/2 c. carrot - julienned or shredded

1 green onion - chopped

1 Tbsp. sliced almonds

1/3 chow mein noodles


Dressing:

3 Tbsp. honey

1 1/2 Tbsp. rice wine vinegar

1/4 c. mayonnaise

1 tsp. dijon mustard

1/4 tsp. sesame oil


Chicken:

1 egg mixed with 1/2 c. milk

1/2 c. flour

1/2 c. corn flake crumbs

salt and pepper


Dip chicken in milk/egg mixture.  Dip/cover with flour/corn flake mixture. Deep fry each side of chicken until golden brown.  While chicken is cooking, mix salad ingredients together. Set aside. Mix dressing ingredients together. When chicken is done, slice and serve in salad-- top with dressing. Or use pre-made chicken breasts.  Also tastes good with broiled or grilled chicken breasts.

Cafe Rio Shredded Chicken Salad




Shredded Chicken:

5 lbs or 7-8 boneless skinless chicken breasts

2 cans diced tomatoes

2 cans diced green chilies

1 tsp salt, pepper, garlic salt, cayenne pepper

Dash of tabasco


Dressing:

1/2 jar herdez salsa verde (I use mild salsa verde)

1/2 cup Mayo

1/2 pkg dry buttermilk ranch dressing

1/2 Tbsp canned jalapenos

1/8 bunch cilantro

1/2 can evaporated milk

1 clove minced garlic

1 Lime juiced


Cook shredded chicken ingredients 4 hrs in crock pot. Shred and add lime juice. This makes a lot and is good left over. Blend dressing ingredients in a blender. Serve shredded chicken with black beans, corn, shredded cheese, lettuce, and rice in tortillas or as a salad.

Berry Fruit Salad

EASY!!  We made this for Kinley's baby blessing and everyone loved it! 
Bonus - it is so easy!

1 small box vanilla pudding
1 small vanilla yogurt
1 tub whipped topping
Frozen raspberries - I used the triberry mix from Costco
    Should still be mostly frozen.  I thawed just enough to break them up.

Mix pudding and yogurt.  Add whipped topping.  Stir in as many berries as you like - I like Lots!
It was still good the next day even though the berries had completely thawed.

Southwest Pasta Salad

my former mission companion and family were coming over right after church for lunch so i wanted to make something that could be made the night before and here is what i made!

it turned out awesome and it could totally be a side dish to a party or a main lunch dish.

some things i changed were using red and green bell peppers and i forgot the chives!
i also added little cubes of pepper jack cheese.
and there is chicken in mine as well!
i just grilled some chicken breast with spices and shredded it.


i didnt use the dressing from this specific recipe because i didnt have the ingredients.
and i wanted a creamy dressing so i thought, "hey the cafe rio one would be good!"

i googled a lot of the knock off recipes and i decided to go with this one bc i have no idea what a tomatillo is! [this sauce is also so yum on tacos!]
we all really liked it! i had it for lunch again the next day and still so good.

Shrimp Nacho Salad

Shrimp
Taco Seasoning
1 Avocado
Fresh or favorite salsa
Chips
Cheese
Lettuce
Other Salad topping
Ranch dressing

Thaw, Shell and Devein +/- 1 lb Shrimp
Put Shrimp in frying pan sprayed with pam, sprinkle with Taco seasoning.
Sautee until shrimp turn pink - don't over cook.
Dice one avocado.
Stir shrimp and avocado into fresh Salsa.

Spread chips on cookie sheet, sprinkle generously with cheese.
Bake in oven until cheese is melted.

Assembly:

Layer Cheesy Chips, Lettuce, salad toppings, Shrimp/avocado Salsa, and dressing. Enjoy!

We loved this and our boys loved this - you know its a winner when its really easy and your boys will eat salad.
