Caramel Oatmeal Cake

This is my friend Angela Heider's recipe.  It is awesome!  I am actually posting it here because I just found it again in my email and don't want to lose it. If you are looking for a yummy dessert, this is definitely worth a try!

Pour 1 1/2 cups of boiling water over 1 cup of quick oatmeal.  Set aside.
Cream together:
   1/2 cup of butter
   1 cup of sugar
   1 cup of brown sugar (packed)
   2 eggs

Add (and mix) oatmeal into sugar mixture, then add:
   1 1/2 cups of flour
   1 tsp. baking soda
   1 tsp. cinnamon
   1/2 tsp. salt
Mix everything together.  Pour into greased 13 x 9 in. pan.  Bake at 350 degrees for 30-35 minutes.

Frosting:
In saucepan on stovetop, combine:
   1/2 cup of butter
   1 cup brown sugar (packed)
   1/4 cup evaporated milk.
Mix together and boil for 1 minute.  Add:
   1 cup of shredded coconut
   1/2 cup chopped nuts (I left the nuts out, but it's really good with them)
Spread over top of hot cake.
