Pasta e Fagioli (Olive Garden) & Parmesan Bites

the soup is one of my moms that she makes and it really tastes like the olive garden kind!
perfect for winter and those cold days where you need a hearty bowl of soup.


Pasta e Fagioli (Olive Garden)
1 lb. ground beef
1 cup julienned carrot
1 cup chopped celery
1 cup diced onion
2 cloves minced garlic
2 14.5 oz cans diced tomatoes
1 15 oz can red kidney beans (with liquid)
1 15 oz can great northern beans (with liquid)
1 15 oz can tomato sauce
1 tbsp white vinegar
1 ½ tsp salt
1 tsp oregano
1 tsp basil
½ tsp pepper
½ tsp thyme
½ package ditali pasta

Brown ground beef in large saucepan or pot over medium heat. [Drain off most of the fat.]  
Add onion, carrot, celery, & garlic & sauté for 10 mins.  
Add remaining ingredients, except pasta, & simmer for 30 mins. 

About 20 mins into the simmering cook the pasta in 1 ½ to 2 qts of boiling water over high heat.  
Cook for 10 mins or just until pasta is al dente, or slightly tough.  
Drain.  Add the pasta to the large pot of soup.  Simmer for 5 to 10 mins more & serve.

I made a little mixture of of parm, garlic salt and parsley and they were do good. Rhodes rolls win!
