Creamy Chicken Tacos (with Mango and Avocado)
Greg is not one for gushy compliments when it comes to cooking. I normally have to gauge his approval by a series of happy grunts and how many pieces of toast or bowls of cereal follow a meal. Well this is one of the ONLY recipes that Greg RAVED about (also Spam and Potato Casserole but please do not take that as a reference point for how great THIS meal is).
I cook up some chicken in the crockpot with salsa and serve the cumin/sour cream sauce and avocado mango as toppings. Also as a hint, if you zest the same lime you squeeze, you can get away with one lime. This was adapted from the hold the onions blog. (the original recipes call for avocado and mango to be thinly sliced but it is easier to eat and the flavors blend better when diced. trust me.)
Creamy Chicken Tacos (with Mango and Avocado)
2 limes
1/4 C. mayo
1/4 C. sour cream
1/2 tsp. salt
2 tsp. cumin
3 C. cooked shredded chicken (salsa chicken recipe in crockpot)
2 mango
1 avocado
8 tortillas
Mix together 2 T. lime juice, 1 tsp. lime zest, mayo, sour cream, salt, and cumin. Add chicken and toss. Dice avocado and mango, and toss in 1 T. lime juice. Spoon chicken into tortillas and top with mango avocado mix and sour cream sauce. Outstanding summertime dinner.

This is one of my favorites from their blog. I was going to post this as well, too funny, which means it's a good one! We eat these quite often.

ReplyDeleteFunny - none of my kids wanted to even try this! They were not happy when they sat down for dinner but I told them they had to at least TRY it! By the end, all but Packer had seconds - even Brigham! Packer said it was actually pretty good, but just not one of his favorites. However, it was a favorite for the rest of us! Very yummy:-)
